Where Does Cherni Vit Cheese Come From?
Cherni Vit is a Bulgarian white-brine blue cheese made from sheep’s milk. It takes its name from Cherni Vit, the tiny village in the municipality of Teteven in north central Bulgaria, population 200 (2015 census), it originated in.
The legend has it that Cherni Vit cheese has been produced by local sheep farmers for centuries. During the summer, shepherds would make white-brine cheese high up in the hills and preserve it in wooden casks. When the summer ends, they would bring it back to their villages and age it in root cellars, whose high humidity and cool temperature facilitated the growth of edible mold.
The Bulgarian version of Wikipedia states that the cheese, although a world-famous delicacy, almost became extinct due to the decline of cheesemaking traditions in the village in the last few decades of the 20th century, when local producers started replacing the permeable wooden casks with plastic vessels.
